Why go

Eating well is the organising principle here. A rice and curry lunch arrives as a dozen small dishes, dhal and jackfruit and coconut sambol among them, for very little money; after dark, hoppers are spun in cast-iron pans at roadside stalls. The coast supplies crab, prawns and seer fish, the hills behind supply the spice, and nobody is in any hurry about the whole business.

Basing yourself in or near Galle and travelling out by train or tuk-tuk keeps the choice wide without long transfers. Ten days allows Galle Fort, a couple of beach towns and a cookery lesson without rushing anything. December to March is the settled season on this side of the island. Vegetarians are unusually well served, and anyone wary of chilli should say so early and often.

  1. Rice and curry at lunchtime

    The full spread is cooked for the middle of the day, which is when it is freshest and cheapest. Expect a dozen small dishes around a mound of rice.

  2. Kottu roti after dark

    Chopped flatbread, egg and vegetables worked on a griddle with two blades, the clatter audible down the street. Order it with cheese at least once.

  3. Crab curry in Galle Fort

    Lagoon and sea crab cooked in a dark, coconut-rich gravy, served with a bib and a hammer. Messy, slow and worth blocking out an evening for.

  4. Hoppers and egg hoppers

    Bowl-shaped fermented rice pancakes, crisp at the edge and soft in the middle, cooked to order at breakfast and again late at night with lunu miris on the side.

  5. A spice garden or cookery class

    Inland from Galle, small plantations explain cinnamon, cardamom and pepper in an afternoon. Many run hands-on classes that end in the lunch you cooked.

  6. Short eats and Ceylon tea

    Bakery counters sell samosas, fish buns and cutlets by the tray, eaten with strong milky tea. It is how the whole coast fills the gap before dinner.

Timing
December to March brings dry weather to the south and west. The rest of the year sees afternoon rain, though the eating does not suffer.
Chilli
Sri Lankan heat is serious. Ask for less if you need it, and keep coconut sambol and curd nearby, because water makes it worse.

Stick to bottled or filtered water, and be a little careful with ice and cut fruit at the smallest roadside stalls.
