Why go
Southern Tuscany's Maremma is a different country from the cypress-lined postcard: wide, rough and half-empty, with hot sulphur water surfacing near the village of Saturnia at a constant temperature of around 37.5°C. The spring feeds a resort spa and, a short way downhill, a staircase of open travertine pools that anyone can use. Around it lie grazing country, medieval hill villages and Etruscan tombs cut into soft volcanic rock.
It works as a two or three night stop between Rome and Florence, though you want a car, because public transport out here is thin. Winter is arguably the best season, with steam lifting off the pools into cold air and few people about. Summer weekends draw crowds up from the coast. Anyone expecting changing rooms, lifeguards or tidy infrastructure at the free pools will be disappointed.

A honey-coloured town growing straight out of a tufa cliff, with a former Jewish quarter carved into the rock beneath it. Around half an hour by car.

Sunken Etruscan roads cut metres deep into tufa near Pitigliano and Sovana, cool and mossy even in August. Several can be walked in an hour.

A tight walled village on a hill above the springs, known for its restaurants and a quiet central square. Ideal for an evening after soaking.

Two more tufa villages within easy reach, with Etruscan necropolises, a Romanesque cathedral and a fortress standing above the gorge.
